Tasting Notes
Vibrant aromas of black cherries, marionberry, clove, cigar box, sweet tobacco, cinnamon, cedar. Notes of rose petals and black tea continue on the nose, leading into black currents and fennel. The flavors are concentrated with blueberries, vanilla bean, graphite and a hint of orange zest. The wine intensifies on the back end with earthy notes of licorice, eucalyptus, freshly brewed coffee and hints of black pepper, followed by a robust finish with lingering tannins.
Method
A blend of 80% Maddy's Block Vineyard and 20% Elephant Mountain Vineyard Cabernet Sauvignon. Hand-picked, hand-sorted fruit fermented in small bins and barrel-aged in a blend of 50% new French oak from Tonnellerie Quintessence and Seguin Moreau. We bottle-aged this beauty for 6 months in our cellar prior to release.
