Wild mountain boysenberries, fresh thyme, dried rosemary, tobacco leaf and hints of espresso mingle together. Intense flavors of black fruit lead into cabinet spices and eucalyptus, with hints of ginger and fun tannins on the finish.
This food-friendly cabernet pairs perfectly with grilled Filet Mignon with a rich Balsamic glaze topped with sautéed Portobello mushrooms.
A blend of each Cabernet Sauvignon we produced in 2020, dominated by Bacchus Vineyard in the White Bluff AVA followed by Elephant Mountain Vineyard in the Yakima Valley. All fruit was hand-picked, hand-sorted and fermented whole-berry in several one-ton bins using a variety of yeasts to achieve a complexity of varietal character, mouthfeel and aroma. Aged for 20 months in both French and American oak barrels.
