Tasting Notes
Boysenberry, blackberry, black currant, black cherry and peppercorn, with hints of cinnamon, nutmeg, cacao nibs and star anise. Concentrated flavors of sweet tobacco, fruit leather, cayenne pepper, menthol, graphite and toffee on the finish. The tannins are smooth and integrated. Serve with filet mignon over Portobello mushrooms and balsamic glaze, dark chocolate and hard cheese like aged cheddar.
Method
Our second vintage of Reserve Cabernet Sauvignon is from Elephant Mountain Vineyard in Zillah, WA. Hand-picked, hand-sorted fruit fermented in small bins. Aged in 50% new French oak from Tonnellerie Quintessence and bottle-aged one year in our cellar prior to release.
