Tasting Notes
Aromas of white flower blossoms, melon, and citrus. Granny Smith apple, stone fruit, and honeycomb on the palate with a crisp, citrusy finish with pleasant minerality.
Method
Born and raised in stainless steel, our 2017 "Steel Dragon" Riesling was hand-picked, hand-sorted and whole-cluster pressed. After approximately one month, the fermentation was stopped with just under one percent sugar remaining. This small amount of residual sugar helps balance the wine's high levels of natural acidity, which is typical of the variety, especially in the cooler climate of the northern Columbia Valley.
