Tasting Notes
Aromas of white peach, buttered popcorn, and pineapple. Tropical flavors of pineapple and coconut with tree fruit notes. Creamy texture with subtle hints of oak spice and minerality on the finish. Barrel-aged for 16 months in new French light toast oak and clarified naturally.
Method
Our second Chardonnay was made to bridge the gap between two very polar styles--buttery and fruity. To achieve roundness and just enough butteriness, we barrel-aged our Chardonnay for 16 months in 100% new French oak and stopped our malo-lactic fermentation at 25%. We feel this method preserved the wonderful tropical fruit flavors courtesy of the exceptionally hot 2017 growing season. To add a touch of old-world character, we bottled the 2017 Luck Dragon Chardonnay without filtration.
